Have you tried making Shami Kebabs at home? If you haven’t found the perfect recipe yet, we have one for you to try. This recipe comes from Sarah Mir, aka flourandspiceblog on Instagram. Check out her reel for the recipe so you don’t miss a step and get the yummiest kebabs possible.
This kebab recipe involves multiple steps, so you need to make your masala and meat separately. Take some beef boti and soaked chana dal, garlic, ginger and onion, and garam masala made from freshly ground spices. Put all of the ingredients together in the pressure cooker till the meat is tender and starts to fall off. The meat and dal mixture should reach the consistency of a paste. Make your garam masala by taking green cardamom, black cardamom, coriander seeds, cumin seeds, whole black pepper, cinnamon, salt and chilli flakes. Grind till you get your powder. While your meat is cooking, get straight to work and make a hara masala for which you need coriander leaves, mint leaves, green chillies and onions.
Once the meat has rested, mix in the hara masala until well combined. Shape the mixture into kebabs before cooking.
Pro tip: Use wet hands to shape your kebabs. Chef’s tip is to fry a test kebab to see if it all works and if it does then you’re good to go. If not, adjust the flavours to taste and use an egg if the kebab is falling apart. Try this recipe at home, make sure you watch Sarah Mir’s reel for all the steps and ingredients.
