The most challenging part of crafting Plum Cakes is waiting for the dried fruits to soak up the alcohol. Now that problem is sorted. Chef Prachi Agarkar (@lets_eat_with_prachi) shares a shortcut, revealing how to whip up a delectable Plum Cake in just one day. She starts the process by soaking her dried fruits and nuts in some rum and orange juice overnight. She takes it out the next day draining the excess liquid and keeps it aside. She then prepares some liquid caramel, along with a flour mixture and a wet mixture which includes butter, sugar, eggs and vanilla. In the wet mixture, she slowly adds her flour, caramel and the soaked nuts and fruit mixture to make her final Plum Cake batter and then it’s all about baking. A couple of hours later the cake is ready. To add a little zing, you can also brush the top of the cake with some rum!
