Celebrate National Mango Day with three not-so-‘aam’ recipes

Go all out with mangoes on its special day!

Summer comes bearing the king of fruits — mangoes. And just before they fade away for another year, National Mango Day (June 22) arrives to give one last glorious day celebrating the fruit. So, here are three simple recipes that will make your day mango-licioius!

Easy Mango Pastry

Puff pastry with the goodness of mangoes, what more could we want? Try this recipe and surprise your fam and friends.

P.S.: Once mango season is over, and if you are missing puff pastries, replicate the same recipe but with bananas or berries.

Ingredients:

  • Puff pastry sheets: 4
  • Ripe mango: 7-8 (Large)
  • Chocolate bars: 2 large (White or dark, as per taste)
  • Cherries: 10gm
  • Molten butter: 1 small cup
  • Eggs: 2
  • Honey: As per requirement, only if needed

Recipe:

  • Deseed the mangoes and make a smooth pulp. Check sweetness. If required, add a sweetening agent like honey
  • Grated the chocolate bars and keep in a bowl
  • Cut the puff pastry sheets in circles or medium-sized squares
  • Now add a small dollop of mango pulp on a puff pastry and spread evenly. Leave out the corners
  • Sprinkle some grated chocolate
  • Cover the whole thing with another same-sized puff pastry sheet. Remember to not make the filling to less or too more
  • Take a fork and close all four sides of the pastry
  • Grease a baking tray with butter and place the puff pastries on them. Brush butter on them too
  • Beat the eggs well and give the puff pastries a egg wash
  • Preheat the oven at 180-200C for 5 minutes
  • Insert the baking tray and bae for 15-20 minutes
  • For plating, take a deep dish bowl and add a dollop of mango pulp
  • Place a puff pastry and add grated chocolate (you can melt it for this part too) on the puff pastry
  • Drop a few berries too and enjoy!

Mango Cake in a Mug

The quickest cake recipe is here! Make it and have it warm while binge-watching your favourite shows or make it for breakfast and team it with some hand-beaten coffee.

Ingredients:

  • All purpose flour: 1 tablespoon
  • Baking powder: 1 small pinch
  • Egg: 1
  • Ripe mango pulp: 2-3 tablespoons
  • Chopped ripe mango: 1 tablespoon
  • Chocolate chip: 1 teaspoon
  • Sugar/Brown Sugar/Honey: 1 tablespoon
  • Full fat milk: 1-2 tablespoons

Recipe:

  • Bring all the ingredients together in a large mug and beat well
  • Preheat the oven at 180C for 2 minutes
  • Bake for 1.30 to 2 minutes. Insert a toothpick and check at 1:30 minutes. Your quick cake is ready!

Mango and Semolina Pancakes

Kickstart your day with filling pancakes or make it for brunch. You can make them as desserts too. After all, there’s never a no-pancake time!

Ingredients:

  • Ripe mango pulp: 1 small cup
  • Sliced ripe mango: 8-10 pieces
  • Roasted semolina: 1 medium cup
  • Saffron strands: 1 pinch
  • Salt: 1 small pinch
  • Baking powder: 1 small pinch
  • Eggs: 2
  • Butter: As per requirement
  • Vanilla ice cream: Optional

Recipe:

  • Take mango pulp, roasted semolina, saffron strands, salt, eggs and baking powder in a mixing bowl and make a smooth pancake batter
  • Grease a nonstick pan with butter and heat
  • Add a dollop of pancake batter and spread well
  • Cover and cook on low heat for 2 minutes
  • Uncover and add a few slices on mangoes and add some more pancake batter to cover the mangoes
  • Grease the sides with butter, cover and cook until both sides are cooked
  • If you’re able to flip, flip the pancake after you have cooked it for about 2 minutes after you have added the upper layer batter
  • Cut into half and serve with a scoop of vanilla ice cream
